Huyen Cooking - Bun Cha Hanoi

Porc grillé et vermicelles Bun Cha Ha Noi

Bun Cha is an iconic dish from Hanoi, known for its harmony between grilled meat, rice noodles, and fresh herbs. This traditional dish, often savored in the bustling streets of the Vietnamese capital, delights with its balanced flavors and punchy nuoc cham sauce.
For a lighter version, air frying retains the authentic taste while reducing fat content.

Ingredients

For the meat:

  • 500g pork belly

  • 5 cloves of garlic

  • 1 large shallot

  • Green onions

  • 1 pack of "bun" noodles

For the marinade:

  • 3 tbsp caramel

  • 1 tbsp oyster sauce

  • 1 tbsp fish sauce

  • 1 tsp salt

  • Pepper

  • Glutamate (optional)

  • Sugar (optional)

For the nuoc cham sauce:

  • 1 tbsp fish sauce

  • 1 tbsp vinegar

  • 1 tbsp sugar

  • 100 ml boiled water

  • 3 cloves of garlic

  • 2 Thai chilies

For the vegetable pickles:

  • Kohlrabi (or green papaya)

  • 2 carrots

  • Salt, vinegar, sugar

  • Coriander, mint, lettuce, Thai basil

Instructions

  1. Preparing the meat:
Wash the pork belly thoroughly and remove the rind. Cut it into two parts: one into thin slices, the other into small pieces.

  2. Aromatics:
Blend garlic and shallot. Reserve half of the mixture for later.

  3. Marinade:
Chop the meat pieces and mix them with half of the marinade. Keep chilled for 4 to 5 hours, or ideally overnight for more flavor.

  4. Meatballs:
Form fairly large meatballs (they shrink during cooking).

  5. Second marinade:
Marinate the meat slices with the rest of the marinade and the remaining garlic-shallot mixture.

  6. Cooking the meatballs:
Grill them in an air fryer at 180°C for 10 minutes, turn them over, then continue for 4 more minutes.

  7. Cooking the slices:
Grill at 180°C for 10 minutes, then increase to 200°C for an additional 4 minutes.

  8. Pickles:
Soak the kohlrabi and carrots in salted water for a few minutes. Drain them, squeeze them with a towel, then season with sugar and salt to your taste.

  9. Plating:
Serve the grilled meats with the noodles, pickles, fresh herbs, salad, and the nuoc cham sauce.

A dish that captures the essence of Hanoi's streets, easy to recreate at home for an authentic experience... no plane ticket required ✈️🇻🇳
